2022: Cabernet Sauvignon, Cabernet Franc.

Traditional with indigenous yeasts
Maturation and ageing
2021: 30 days maceration on the skins, 8 months in French oak barrels, then in cement for 10 months, 1 year in bottle.
2022: 5 days maceration on the skins, 8 months in amphora, then in cement for 10 months, followed by 6 months in bottle.
